Underground quarrying in Bailly dates back to the Middle Ages. The high-quality limestone was used until the 20th century to build monuments such as castles, churches and towns. Transport was facilitated by the river Yonne, which flows at the foot of the quarries. Since 1972, these quarries have been home to the Caves Bailly-Lapierre, founded by the Auxerrois winegrowers to produce Crémant de Bourgogne: 4 hectares of cellars and 7 million bottles stored.
